Chicken Long Rice


Like a Hawaiian Chicken Soup, this is perfect for colder days and oh so yummy. It's comfort food! And guess what...again my extremely caucasian Sweetie, liked it!

Mom had a recipe book and since I made the Pancit a few times, she got hungry for this. Same noodles. So, she went to the store and got the ingredients and brought over her recipe book. Hint, hint...lol. She's funny.
Ingredients:
2 lb. chicken (on the bone)
6-8 green onion stalks
large bag (16 oz.) of bean thread noodles
ginger
6 chicken bullion cubes
4-6 cans of chicken broth
Directions:
Boil chicken in approximately

Chicken, Veggie & Cheese Loaf

(picture is in the cooking stage...not quite done, 2 loaves and 4 extra biscuits)
This is a variation of a Pampered Chef ring recipe...love those rings!



Ingredients:
2 cans of Pillsbury flaky biscuits
1 bag of California Blend veggies (thawed)
2 cups of Colby Jack cheese - grated
1 lb. chicken breast, boiled and cubed


Directions:
Separate biscuits and then 1/2 them, so each piece is flat
Lay them out in 2's to form a sort of rectangle
Lay chicken down middle of rectangle
Add veggies on top of the chicken
Sprinkle cheese on veggies
Pull sides of biscuit closed at top and ends

Bake at 350 until outer shell is golden brown

Pancit (Filipino Noodles)


I learned to make this with the help of a friend here in Deming. She is Filipino and this is really yummy! Try it! We have it regularly now and everyone loves it...even the very "caucasian" Craig.


Ingredients:

1/2 - 1 cup olive oil
Large package of Bean Thread noodles (I use about a pound)
1 medium sized head of cabbage (chopped)
3 carrots (grated)
1 medium onion (chopped)
4-5 garlic cloves (pressed/minced)
1 3/4 cup Kikkoman Soy Sauce
1 lb. chicken breast - boil then cube or cut into small pieces
2 cans of chicken broth


Cooking Directions:

In large bowl of hot water, soak noodles for 20-30 minutes.
In a large pot, saute cabbage, carrots, onion, and garlic.
Then add soy sauce and cooked chicken. Stir and let brown on medium/high heat about 5 minutes.
Add in noodles and stir on medium heat for about 5 minutes.
Stir in chicken broth and let simmer on low heat until most of soup is cooked out.
